That's when this delicious recipe comes in. The avocado coconut curry is a lush and creamy dish that won't just work well for your keto diet but will also give your tastebuds that much-needed twist. Now, you might be thinking to yourself that curry couldn't possibly be good for your keto diet? Well, normally you would be right, but since this one is made of avocados, you have absolutely nothing to worry about.
Avocados have a high-fat content but despite that, they're touted to be one of the best fruits available owing to their nutritious properties. "Avocados contain (PFAs), which are anti-inflammatory. Here's the recipe:
Ingredients needed: 2 Tbsp coconut oil, 2 dried red chillies, 1 tsp methi seeds, 1 tbsp mustard seeds, 1 onion, 4-5 garlic cloves, 1 ginger, 1 green chilli, 2 stems curry leaves, 1 tsp turmeric powder, 1 tsp red chilli powder, 1 tbsp dhaniya powder, 1 tomato, 1 cup coconut milk, 1 tsp rice flour, 1 avocado, 1 tsp tamarind paste.
Process: Heat the oil in a pan and add dry red chillies, methi seeds & mustard seeds. Saute onion, garlic cloves, ginger, green chilli & curry leaves and add turmeric, red chilli, dhaniya powder, tomato & coconut milk. Mix well and add some water to make a good paste. Mix the rice flour with water and add to the paste. Add the tamarind paste and then chop up the avocado and add it to the curry. Voila! Your dish is ready to be served.
