Here’s the delicious recipe:
INGREDIENTS
2 lobster tails
1 lb. package of dry tagliatelle or fettuccine noodles
Pinch of saffron
5 shallots
¼ cup butter
1 28 oz. can diced plum tomatoes
Olive oil
8 oz. mushrooms, sliced
4 cloves garlic, minced
4 tablespoons chopped fennel tops
Salt and pepper to taste
¼ cup chopped fresh Italian parsley
PREPARATION
Peel the lobster tails and slice the meat. Mince the shallot and sauté it in 1/4 cup butter. Mix the saffron into 1/4 cup hot water, and when the shallots have become translucent, stir the saffron water in; season the mixture with salt and pepper, add the vermouth and the cognac. Bring the sauce to a boil, add the lobster meat and shrimp, cook for 3 or 4 minutes, then cover and turn off the flame (keep it warm). Brush the mushrooms clean and slice them, then sauté them until they wilt in a few drops of olive oil. Season them with salt and pepper, and blend them with the tomato and the garlic. Stir the resulting sauce into the lobster mixture. Boil the tagliatelle in lightly salted water until they are al dente, and drain them. In the meantime, stir the minced fennel tops into the lobster, and heat the sauce through on the fire. Season the pasta with the sauce, carefully transfer it to a serving dish, decorate the dish with parsley, and serve.
