What's the one thing nutritionists recommend when you want to lose weight? To have a light dinner of course. However, most of us haven't been following this tip even remotely. We start by skipping breakfast, grabbing something edible for lunch and for dinner we sit down and eat like kings. But if you want to shed those extra kilos, you have to start eating light for dinner and ensure that you eat properly for the rest of the time too. If you're looking to make some changes to your dinner routine, here are a few low-calorie recipes that will help you stay fit as a fiddle.
Mustard-Parmesan Whole Roasted Cauliflower Put a twist to your basic gobhi and try this splendid recipe for a change. You're going to need 2 Large Cauliflowers, 1 Clove Garlic, Halved, 1/4 Cup Olive Oil, 4 Tbsp Dijon mustard, Kosher salt, Freshly Ground Black Pepper, 1/2 Cup Fresh Parsley Leaves, chopped, 1/4 Cup Parmesan grated, Lemon wedges.
Pre-heat your oven to 450 degrees and lay out some tin foil on your baking tray. Rub the garlic on the cauliflowers and whisk together the oil, 3 tablespoons mustard, 1/2 teaspoon salt and some black pepper. Brush this mixture on the cauliflowers from above and below. Once done, let the cauliflower cook in the oven for a good 50 minutes to an hour. Once cooked, brush the cauliflower with the remaining mustard and garnish with the Parmesan cheese. And voila! Your dish is ready.
Mixed Vegetable Salad
Take 2 Medium Ripe tomatoes, 2 Cups Cabbage - shredded, 1 Capsicum -sliced, 2 Carrots - sliced, 2 Tbsp Vinegar, 1 Tbsp Honey, 2 tsp Salt, A pinch of Pepper, 2 Tbsp Yoghurt.
Cut up the tomatoes into 8 segments each. Mix the vinegar, honey, yoghurt, salt and pepper together to make the dressing. Once you're ready to serve, just mix the vegetables with the dressing and you're good to go.
Fish Curry Sans (Without) Oil Take 1 Whole fish , 1 Cup Coconut scrapping, 1 tsp Chilli powder, 1 tsp Coriander powder, 1/4 tsp Turmeric, 1/2 tsp Pepper cones, 2-3 Shallots or onions, Few Curry leaves, 2 Green chillies, 2 Medium Tomatoes, 2-3 Tamarind sticks, 1 Medium Lemon.
Soak the tamarind in one cup of water while you chop the tomatoes and green chillies. Peel the onions. Mix the coconut scrapping, chilli powder, coriander powder, turmeric, pepper cones until they form a paste. Add the onion to this mixture and blend again. Strain the tamarind water. In a pan add the paste, tamarind water, tomatoes and chillies. Once it simmers add the fish and curry leaves. Mix it well and let it simmer for ten minutes and your dish is done.
